Unfiltered olive oil is the purest
Consumers believe that unfiltered olive oil is pure and of higher quality. The truth is that the olive oil that is extracted in the olive press contains olive fruit particles and a small percentage of humidity. If it is not filtered (with a mild natural paper filtration process) during this first stage of extraction this olive fruit particles, through a short period of time and with the help of gravity will create a sediment at the bottom of the bottle. This sediment will create a defect and will destroy the polyphenols oleocanthal and oleacein (anti-inflamatory and anti-oxidant properties of the olive oil), and what we end up is consuming an olive oil that has only calories without any medical properties!
All olive oils must undergo a mild paper filtering process, even the early harvest ones, and be bottled in a transparent state.
